Pork Scallopine with "Sapore di Modena"

Second Course

400g (14oz) pork fillet
100g (3.5oz) flour
4 Tbsp "Sapore di Modena"
extra virgin olive oil (to taste)
salt (to taste)


Carefully cut the pork into small slices of about 40g. Flatten and flower. Grease a large skillet with a thin layer of olive oil and arrange the slices of pork without overlapping them and lightly salt. Place the skillet over medium heat, turning the pork after a couple of minutes and lightly salt. After about five minutes, turn the fire to low and spray with two tablespoons of "Sapore di Modena". Let cook for another five minutes then spray with the other two tablespoons of "Sapore di Modena" and turn. Leave on low fire for another five minutes and the scallopine are ready. Serve on a warm plate and add some drops of "Sapore di Modena" to taste.
