Farmer's Breakfast


1 white onion
2 fresh eggs per person
Aceto Balsamico Tradizionale di Modena "Umberto"


Cut some pancetta and a white onion into thin slices: but not too thin. Brown in a frying pan with no more than two table spoons of butter. When browned, add two fresh eggs without breaking the yolk. When cooked, remove from fire and arrange on a dish. Dress with a spoonful of Aceto Balsamico Tradizionale di Modena "Umberto" Pedroni.   Add the balsamic vinegar while the food is still warm! (some people add the balsamic vinegar directly into the pan just before taking it off the fire).
