Tuna, Bean and Onion Salad


Serves 4:
700g (25oz) "Hungarian" white beans
200g (7oz) tuna in oil
350g (12oz) onions or scallions
4 Tbsp extra virgin olive oil
1 garlic clove
1 sage leaf
salt (to taste)


Boil the beans with the garlic and sage. Drain and let cool. In a bowl, mix the beans with the tuna (minced) along with its oil. Cut the onions in thin rings and add to the tuna and beans. Salt and mix well then add the olive oil. Mix again and serve. You may also add a couple of tablespoons of Aceto Balsamico, but in this case add the olive oil last.

This salad makes an excellent antipasta as well as a tasty meal.
